CRUNCHY BELL PEPPER BOATS
Why I like these:
They are a much healthier alternative to typical crunchy snacks and they still satisfy a crunch craving! Bell peppers are a great source of Vitamin C and they also have vitamin K1, vitamin E, vitamin A, folate, and potassium. They have some fiber and are good sources of antioxidants. Feta provides calcium and Vitamin B12, and is a good source of protein. Feta does have saturated fats, so if you want to make this already healthy snack even healthier, use goat cheese which is a good source of healthy fat. The seeds and almonds are terrific sources of protein.
CRUNCHY BELL PEPPER BOATS
Ingredients:
1 Yellow bell pepper (or any color bell pepper – but note that green typically is less sweet than the other colors)
2 TBSP of crumbled feta cheese or goat cheese
Olive oil or balsamic glaze for drizzling
1 TSP or roasted sunflower seeds or toasted slivered almonds
Basil leaves, or a few sprigs of parsley or cilantro, for garnish
Steps:
1) Wash the pepper.
2) Cut off the top of the pepper, then cut around the inside of the pepper to remove the core and the seeds.
3) Cut the pepper in half and place on a plate.
4) Spoon the feta cheese evenly into each half.
5) Drizzle with olive oil or balsamic glaze.
6) Sprinkle each half evenly with roasted sunflower seeds or toasted slivered almonds.
7) Add garnish.
8) Enjoy!
