Grapefruit and Fennel Salad
Why I like this:
The pairing of fennel and grapefruit is so delicious! This dish has only 4 ingredients: fennel, red grapefruit, crumbled feta cheese, and dijon mustard. Fennel is rich in iron, vitamins A and C, and calcium. It has been shown to aid in digestion by reducing both bowel inflamation and the bacteria in the gut that can cause gas. Grapefruit also provides vitamins A and C, as well as fiber, and about 10% of daily potassium needs. Mustard not only adds a salty taste to compliment the sweetness of the fennel and the grapefruit, but it also contains anitoxidents, as well as the nutrients: iron, selenium, calcium and phosphorus. Feta cheese, like mustard, is a good source of calcium and phosphorus, which, when eaten together have been linked to improved bone density and the prevention of osteoporosis. Feta is also a good source of protein. Feta is, however, high in sodium and saturated fat - so use it sparingly.
RED GRAPEFRUIT AND FENNEL SALAD
Ingredients:
1/2 fennel bulb with fronds
1 Tbsp. whole grain mustard
1/2 red grapefruit
1 Tbsp. crumbled feta cheese
Steps:
1) chop the fennel and pour into a small bowl
2) stir in the mustard
3) cut the grapefruit in half, peel the half that will be used (store the other half in the refrigerator), separate it into sections and place the sections on top of the fennel
4) sprinkle the crumbled feta cheese on top
