Quick Kiwi Snack

Why I like this:

The sweetness of the kiwi pairs well with the tangy flavor of goat cheese. The sunflower seeds provide a complimentary crunch to the softness of the goat cheese. Kiwis are good sources of Vitamin C and fiber, and they help foster a healthy gut microbiome. Sunflower seeds can reduce inflammation. Goat cheese provides protein and calcium, and is a healthy fat. This is a great morning snack to tide you over until lunch!

 

Quick Kiwi Snack

Ingredients:

1 kiwi

1/2 oz. of goat cheese (crumbled)

1 tsp. of roasted, unsalted sunflower seeds

Steps:

1) Peal and slice the kiwi. Place the slices on a plate.

2) Distribute the goat cheese evenly among the slices.

3) Sprinkle the sunflower seeds over the cheese.
