Air Fried White Mushrooms
Why I like this:
It’s quick, healthy, and tasty! Use it as a snack, side dish, or topping for meat or salads. Mushrooms are low in calories and fat, provide some fiber, and they have a rich flavor, especially when cooked. Mushrooms can be a good source of Vitamin D (which is increasingly important for bone health as we age, but is hard to find in most foods). Vitamin D content of mushrooms depends on how they are grown and whether manufacturers expose them to UV light. Mushrooms sold in grocery stores are usually grown in dark, indoor environments and will contain little Vitamin D, but manufacturers may increase the Vitamin D content by exposing the mushrooms to UV light. Look for labels on the mushrooms that say they have been treated with UV light, or check the food label listing for the exact content of Vitamin D.
Air Fried White Mushrooms
Ingredients:
1 1/2 cups of sliced, prewashed, white mushrooms
1/2 Tbsp. extra virgin olive oil
1/4 tsp. salt
Steps:
1) Preheat the airfyer to 400 degrees for 4 minutes.
2) Place the mushrooms in a bowl. Add the olive oil and salt and mix until coated.
If using whole, non - prewashed mushrooms, clean the mushrooms by wiping them with a damp paper towel (rather than running them under, or soaking them in, water) and then slice.
3) Once the air fryer is finished preheating, place the mushrooms in a single layer in the airfryer basket. Use the “Veggies” setting and adjust the temperature to 370 degrees and the time for 6 minutes. Set the “Shake” setting - this will allow you to shake the basket about half way through the cooking. If your air fryer doesn’t have a shake setting, set the time for 3 minutes. Remove the basket, shake it, and then continue cooking for another 3 minutes.
4) Enjoy these warm over meat, mixed into an omelet, or simply on their own as a quick snack or side dish. Or, let them cool and add them to a salad.
