Cilantro Avocado Yogurt Dip

Why I like this:

One word: Probiotics!

Avocado adds a creamy texture to this dip and is a source of healthy fat. Yogurt with live active cultures is a probiotic and good for gut health. Garlic is a prebiotic that feeds the healthy probiotics. Cilantro provides flavor. Serve with whole grain crackers or raw carrots, celery, peppers, or cucumbers. Use as a spread on a sandwich or toast or as a dip for “Homemade Whole Grain Chips” - search under the Recipes tab.

 

Cilantro Avocado Yogurt Dip  

Ingredients:

4 cups of cilantro (including stems)

1 tsp. minced garlic

1/2 Tbs. lime juice

1 avocado

1/4 cup of chopped walnuts

1 tsp. cumin powder

pinch of red pepper flakes

pinch of salt

1 container (5.3 oz.) of Greek yogurt

1-2 Tbsp of extra virgin olive oil

Steps:

1) Put all ingredients (except the yogurt and olive oil) in a food processor and pulse until the ingredients are thoroughly chopped.

2) Add the yogurt and blend well.

3) Gradually add the olive oil until well blended.
