Endive Boats With Orange
Why I like this:
This is such a light and refreshing appetizer! The tanginess of the endive contasts smoothly with the sweetness of the orange. Endive provides fiber, oranges are chock full of vitamin C, goat cheese provides calcium, and walnuts provide protein and healthy fat.
Endive Boats With Orange
Ingredients:
3 small heads of endive
1-2 oranges
1/2 cup of crumbled goat cheese
1/4 chopped walnuts
1 tsp. olive oil
1/2 tsp. of balsamic vinegar
Steps:
1) Remove the outer leaves of each head of endive and rinse the heads.
2) Peel off leaves of about equal size from each endive head and place on a tray - these will be the “boats” (save the leaves that are too small to use as boats - they can be put in a salad later or sauteed with other vegetables as a side dish).
3) Peel the orange and separate the sections (cut in half if needed to fit in the boat). Place a section in each boat.
4) In a small bowl, mix together the crumbled goat cheese, chopped walnuts, olive oil, and balsamic vinegar. Place a dollop or 2 on top of the orange slices.
5) Serve immediately, or store in refrigerator for 1-2 days.
