Sauteed Savory and Sweet Vegetables

Why I like this:

The sweet and savory taste! Orange bell peppers provide the sweetness as well as lots of antioxidants to support immune health. Fennel, endive, mushrooms, and green onion provide a savory taste plus fiber that is good for gut microbiome health. Olive oil is a heart healthy alternative to butter.

 

Sauteed Savory and Sweet Vegetables

Ingredients:

1 Tbs. olive oil

1 orange bell pepper sliced into spears

1/2 of a fennel bulb plus some fronds

1 small endive bulb sliced into halves or quarters

1-2 white mushrooms sliced

1/2 garlic clove chopped

A pinch of adobo spice

Steps:

1) Heat the oil in a skillet over medium-high heat.

2) Add the vegetables and saute until they are no longer hard. Add the garlic and saute for 1 minute.

3) Remove from heat and sprinkle with adobo spice.

Yields approximately 1-2 servings.
